Berry-Filled Cupcakes
Ingredients
1/2 cup egg white
1/4 cup all-purpose wheat flour
1/4 cup fat-free milk 1 tablespoon cooking oil
1/4 teaspoon salt
2 cups fresh fruit (choose from sliced strawberries, peaches, blackberries, blueberries, seedless grapes, and/or pitted and halved sweet cherries)
2 tablespoons orange marmalade, warmed
Directions
  1. Preheat oven to 450F.
  2. Add all the ingredients to the blender and whir until combined.
  3. Spray your muffin tin with cooking spray (or use the silicone ones like I did no need to grease).
  4. Distribute batter evenly between cups.
  5. Bake about 12 minutes on the middle rack.
  6. Let cool 5 minutes before removing or they'll stick.
Cannonball smoothie
1 cup orange juice, preferably calcium-fortified
1 banana
1/2 cup frozen or fresh blueberries
1/2 cup frozen or fresh blueberries
1/2 cup fat - free plain yogurt
1 tablespoon flaxseed
Combine all ingredients in a blender; cover and blend until creamy. Serve immediately.
Chicken Pot Pizza
Makes 6 servings

1 pound prepared whole-wheat pizza dough (see Shopping Tip), thawed if frozen
1/2 cup no-salt-added tomato sauce
1/2 teaspoon garlic powder
1 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
2 ounces chopped chicken breast(1/2 cup)
1. Place oven rack in the lowest position; preheat to 450°F. Coat a large baking sheet with cooking spray.
2. Roll out dough on a lightly floured surface to the size of the baking sheet. Transfer to the baking sheet. Bake until puffed and lightly crisped on the bottom, 8 to 10 minutes.
3. Whisk tomato sauce and garlic powder in a small bowl until combined.
4. Spread sauce evenly over the baked crust. Top with mozzarella, Parmesan and chopped chicken breast. Bake until the crust is crispy on the edges and the cheeses have melted, about 12 minutes.
Strawberry cheesecake sandwich
Makes 1 serving

1 tablespoon reduced-fat cream cheese
2 slices very thin whole-wheat sandwich bread
2 medium strawberries, sliced
Spread bread with the cream cheese. Place sliced strawberries on 1 piece of bread, top with the other.
Sweet and sour chicken sticks
Makes 4 servings

1/4 cup orange juice
1/4 cup water
3 tablespoons honey
1 tablespoon plus
1 teaspoon cider vinegar, divided
1/2 teaspoon salt, divided
1/4 teaspoon ground coriander
1 teaspoon cornstarch
8 chicken drumsticks (about 2 pounds), skin removed, trimmed
1/4 teaspoon freshly ground pepper
1. Preheat grill to medium
2. To prepare dipping sauce, combine orange juice, water, honey, 1 tablespoon vinegar, 1/4 teaspoon salt and coriander in a small saucepan; bring to a boil. Whisk cornstarch and the remaining 1 teaspoon vinegar in a small bowl until smooth. Add to the saucepan and return to a boil, whisking until thickened, 30 seconds to 1 minute. Remove from the heat.
3. Sprinkle drumsticks with the remaining 1/4 teaspoon salt and pepper. Oil the grill rack (see Tip). Grill the drumsticks until crispy on all sides and an instant-read thermometer inserted into the thickest part registers 165°F, about 15 minutes total. Serve the drumsticks with the dipping sauce on the side.
Broccolini a la Houdini
2 Servings, 1 cup each
Ingredients:
4 oz. multigrain pasta
2 cups fresh broccoli
4 medium carrots
2 cups vegetable broth
4 garlic cloves
1 small onion
1 tablespoon of olive oil
2 tablespoons grated parmesan cheese
Boil pasta as directed on package. Put broccoli, carrots, vegetable broth, garlic, onion, and olive oil in blender. Chop and mix all together. Heat in saucepan and pour over pasta. Sprinkle with parmesan cheese. Garnish with basil leaf.
